Slice the ends off each zucchini. Cut lengthwise, and remove some of the pulp in the center, with a teaspoon. Mix the removed zucchini meat with the egg, cheese, salt, and pepper. Stuff the cheese mix into the zucchini shells. Bake on a pan lined with wax paper at 375 degrees Celsius for 25 minutes.

Hi, Kris! It should be available in any good grocery store, labeled as zucchini.... But the zucchini that's available here is thinner and looks more like a cucumber, but with yellowish specks.
The zucchini is a cousin of the squash, if I'm not mistaken. =)

i wish there'd be an alternative dish/ recipe so we can still watch our calorie intake.
Like for me i don't have an oven, so much as i wanted to try this recipe, still i cannot do it :)

i actually have a similar recipe.. but with cucumbers instead. i also boiled the egg and added bread crumbs for topping. for those who don't have ovens at home, try the oven toaster, just until the top is golden brown. should work just fine, i tried it when i was too lazy to pre-heat. ;)
