1/2 pound of green lentils 1 small can of chorizo 1 carrot, chopped 1 onion, diced Salt, pepper
Soak the lentils in boiling water for 30 minutes. Wash and drain. Place the lentils, carrot, and onion in a pressure cooker. Season with salt and pepper. Cook under pressure between 15-20 minutes. Release the pressure and add the chorizo. Return to the fire, and cook for 20-30 minutes under low heat. Add water if necessary, stirring occasionally, to ensure that the lentils do not stick.
