Ingredients: 1 cup self raising flour 1/4 cup powdered sugar 1/2 cup white sugar 1 teaspoon vanilla 1 1/4 cup egg whites (about 8 XL eggs) 1 1/4 teaspoon cream of tartar 1 tablespoon lemon juice
Ingredients for garnishing: 1 cup whipped cream Berries Mint leaves
To make self-raising flour: Sift together 450 grams cake flour with 1 tablespoon baking powder and 1 1/2 teaspoon salt. (Get 1 cup for the recipe.)
Directions: 1. Preheat oven to 325 F. 2. Whip egg whites, cream of tartar, and lemon juice until frothy. 3. Slowly add 1/2 cup sugar, beat until stiff 4. Sift together self-raising flour and 1/4 cup powdered sugar. 5. Fold flour mixture and vanilla into the egg whites. 6. Bake in a tube pan for 40 minutes 7. Invert and cool completely
