2 carrots 1 cup of lentils, soaked and rinsed 1 onion, finely chopped 1 teaspoon of mustard 1 teaspoon of vinegar 1 tablespoon of olive oil Salt, pepper
Fill a saucepan with water, lightly salted, and bring it to a boil. Peel the carrots and cut them into rounds. Add the lentils to the boiling and stir and cook, covered for about 20 minutes. Add the carrots and cook for another 15 minutes. Drain the lentils and carrots and rinse with cold water to stop the cooking. In a separate pan, heat oil and fry the chopped onion. Prepare the dressing by mixing the mustard and vinegar together, and slowly adding the oil. Mix the dressing with the lentils, carrots, and onions. Season with salt and pepper to taste. Serve warm.
